Diwali Special – Gajar ka Halwa (carrot pudding)

Well, My friends here, suggested we have atleast a “DESI” dinner on the ocassion of Diwaliyesterday – BETTER LATE THAN NEVER — even though we could not celebrate the traditional way!

And ofcourse, all of us (8 of us) are amteaurs in cooking… cant afford that a single person would cook for others….so they decided we would go for potluck and decided that I should do dessert [dont know they thought thats my type by default ;-)] and if possible starter (given that its a weekday)!! 

Ahh I thought, opened my fridge…..i had a liter of milk which i wont be finishing soon so thought of Carrot Halwa…..mind you experimenting for the first time ….

Things you need :

  • Milk – 2 cups
  • Condensed milk – half tin (61/2 oz=200gm)
  • Grated carrot – preferably gajar (sweet carrots) — 4-5 cups
  • Cardomom – 6 pieces crushed
  • Sugar – 2 tbsp.
  • Butter/ghee – 2tbsp 
  • Cashew nuts and almonds – to garnish


Procedure :

  • Take deep bottom pan and heat the 1tbsp butter or ghee.
  • Add and cook grated carrot for 5 mins in the ghee
  • Add milk and cook the carrots till the milk evaporates stirring ocassionally so that it does not burn/stick to the bottom. 
  • You could add the cardomom during this time, it would take 20-25mins for the milk to evaporate.
  • Now add the sugar and condesed milk to the cooked carrot. Stir occassionally and heat on low flame for 20 more mins…Ya you have to be very patient and believe me patience pays off well (as renu says “sabr ka phal meetha hotha hai”)
  • Meanwhile, take another pan , add remaining butter and fry the cashews and almonds till light brown.
  • Take the pan off the stove, when you find the moisture is fully absorbed and decorate with cashews and almonds!

Tatadadannnnn Gajar Ka Halwa Ready!! Umm….does this look yummy??
