Rajma Masala – red kidney bean curry

I was franctically searching through my cup boards for milk powder which I would have buried months before……In my process of digging, I could not manage to find milk powder but nevertheless, found rajam (red kidney beans) ….So plan for saturday lunch ….Punjabi style rajma masala [no idea if it would stay punjabi coz its my designed recipe taking suggestion of my friend Yogesh]

Here’s the recipe

What do you need :

Rajma/kidney beans – 1 cup

water – 4 cups (to soak the rajma)

Garam masala – 1tsp

coriander powder – 1tsp

chat masala – 1 tsp

onions – 1 big size one very finely chopped/blended in blender

Tomatoes – 2 very finely choppes/made to puree

ginger – 1 tsp finely chopped

garlic – 2 cloves finely chopped (optional because I dont use garlic)

Turmeric powder – 1/2tsp

Oil – 3tbsp

Salt – to taste

For South Indian touch to Punjabi style –

Seasoning with a mixture (whole mixture of about 1tsp) of mustard seeds, cumin seeds (jeera), bengal gram, black gram.

Just for punjabi style – add 1tsp of only cumin seeds.

Procedure :

 

  • Wash the beans well and soak them overnight (for about 8 hrs) as a preparation.
  • In the morning,(or whenever you want to cook), transfer the rajma along with water to pressure cooker and add turmeric and salt to it and cook. [3 whistles and leave till pressure drops]
  • In a saucepan, heat 2tbsp of oil. Now add the seasoning (if south indian) or the jeera as the case may be….Add onions, green chillies, ginger (and garlic ) , tumeric and fry till onions become translucent.
  • Now add in the tomatoes and keep on low heat till the water seems to be evaporated.
  • Add the garam masala, jeera powder(coriander), chat masala and mix well.
  • Now its the time to add the boiled rajma along with the the water (in which we boiled) and mix well.
  • Granish with coriander or cilantro leaves, serve hot with rice or roti 🙂
